Nature Communications: Scientists have identified a sixth basic taste recognized by the tongue

Another taste that the human tongue can recognize was discovered by scientists from the University of Southern California in the USA. As the researchers report in Nature Communications, only five such tastes were previously known: salty, sweet, sour, bitter and umami.

It turned out that the sixth basic taste distinguished by the tongue is associated with ammonium chloride. This ingredient is popular in sweets in Scandinavian countries. In particular, you can find it in salted licorice.

Taste is recognized by the same protein that is responsible for recognizing sour taste using the OTOP1 receptor.

“We saw that ammonium chloride is a really strong activator of the OTOP1 channel. It activates it as well or better than acids,” explained neuroscientist Emily Lyman.
